Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Toss all the vegetables together with the oil, season with salt and pepper, and place into a casserole dish or Dutch oven.
Step 3: Top with the chopped sausage and cover.
Step 4: Cook for 30 minutes and remove the cover.
Step 5: Cook for another 30 minutes, uncovered. The vegetables should be al dente, if you prefer them softer, cook for another 10 minutes.
