  • 2 bell peppers, chopped into 1-inch pieces
  • 1 stalk celery, sliced into 1/4-inch thick pieces
  • 1/2 onion, chopped into 1-inch pieces
  • 4 ounces button mushrooms, quartered
  • 2 tablespoons garlic infused oil
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Preheat oven to 350 degrees Fahrenheit.

  • Step 2: Toss all the vegetables together with the oil, season with salt and pepper, and place into a casserole dish or Dutch oven.

  • Step 3: Top with the chopped sausage and cover.

  • Step 4: Cook for 30 minutes and remove the cover.

  • Step 5: Cook for another 30 minutes, uncovered. The vegetables should be al dente, if you prefer them softer, cook for another 10 minutes.
