Ingredients

The ingredients are:
  • 8 ounces long grain white rice (1 1/4 cup)
  • 2 1/2 cups water
  • 1 bay leaf
  • 1 pound Linguica sausage, sliced (smoked sausage)
  • 1 tablespoon tomato paste
  • 1 cup frozen lima beans, thawed
  • 1/2 cup frozen pearl onion, thawed
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

How to Make

  • Step 1: Heat the oil in a sauce pan and fry the sausage, season with lightly with salt and pepper.

  • Step 2: Add the onions and garlic stir until onions are tender but taking care not to burn the garlic.

  • Step 3: Add tomato paste, don't burn.

  • Step 4: Add paprika, water and bay leaf, mix together well.

  • Step 5: Add in the lima beans, thawed pearl onions and rice stirring to combine, bring to a boil.

  • Step 6: Turn down to simmer and cover.

  • Step 7: Cook for 20 minutes, take off heat and leave covered 5 minutes.

  • Step 8: Remove the bay leaf and season to taste.
