Ingredients

The ingredients are:
  • 8 ounces white bread, square sandwich loaf (8 slices)
  • 12 ounces cooked chicken breast, finely chopped
  • 1/3 cup celery, minced
  • 1/4 cup chives, minced
  • 2 tablespoons green onions, minced
  • 1/4 cup pimento stuffed Manzanilla olives, chopped
  • 2 tablespoons fresh parsley, minced
  • 1/8 teaspoon salt
  • 1/16 teaspoon freshly ground black pepper, to taste
  • 1/3 cup mayonnaise
  • 8 tablespoons butter, softened

How to Make

  • Filling:

  • Step 1: Place the chicken in a large bowl and add the chives & green onions, olives, parsley, salt and pepper.

  • Step 2: Add enough mayonnaise to make a creamy but not sloppy mixture.

  • Step 3: Cover & chill until ready to assemble the sandwiches.

  • Sandwich:

  • Step 4: Butter all slices of square bread.

  • Step 5: Divide the chicken mixture between four slices of bread.

  • Step 6: Cover with remaining bread slices.

  • Step 7: Place on a wax paper lined rimmed baking sheet, cover with wax paper & a damp tea towel & chill for at least 1 hour.

  • Step 8: Remove from the fridge when ready to assemble your sandwich trays.

  • Step 9: Trim the crusts & cut each sandwich into rectangles.
