Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 cup red onion, minced
  • 8 ounces chicken breast, boneless, skinless
  • 1 cup carrots, sliced
  • 1 stalk celery, sliced
  • 1 leek, sliced (white part only)
  • 1 cup tomatoes, chopped
  • 6 cups chicken broth
  • 1 cup fresh baby spinach
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon freshly ground pepper
  • 15 ounces white kidney beans (1 can)
  • Finish
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Briefly fry the chicken, onion and carrot in a heated pot with butter and oil.

  • Step 2: Cover with broth and add celery stalks, leeks and tomatoes.

  • Step 3: Bring to a boil.

  • Step 4: Cook on low heat for approx. 20 minutes, season with salt and pepper and garlic.

  • Step 5: Add the beans and spinach, let it boil for 14 minutes.

  • Step 6: Finally, add the herbs and serve immediately.
