Step 1: Rice ... Cook the rice according to package directions, but substitute the water with chicken broth. Set to the side once the rice is done.
Step 2: Base ... In a medium size pot, add 1 teaspoon or less of olive oil and add in the sausage and cook on medium high heat for 2-3 minutes until you get a little color on the sausage; then add in the onion, celery, bell pepper, garlic and cook another 2-3 minutes.
Step 3: Add the worcestershire, a few drops of hot sauce (you can always add more), oregano, thyme, cajun seasoning (start out with 1 teaspoon, again you can add more later), bay leaf, broth and beans. Bring to a light boil, then reduce to a simmer. Cook uncovered for 15 minutes until some of the liquid has reduced and the beans have thickened up a bit.
Step 4: Finish ... Remove the bay leaf and season once again with more cajun seasoning and hot sauce if necessary; as well as salt or pepper depending on your taste. Cook another 5-10 minutes and it is ready to enjoy.
Step 5: Serve ... A nice bowl filled with rice, top with the beans and serve with some crusty bread. ENJOY!
