  • 1 pound pork sausage
  • 1 green onion, minced
  • 8 ounces Jiffy cornbread mix (1 box)
  • 1 egg
  • 5 ounces sour cream (1/3 cup)
  • 1/3 cup milk
  • 8 ounces Colby Jack cheese, shredded (1 cup)
  • 2 tablespoons pickled sliced jalapenos
  • 2 tablespoons pickled jalapeno juice

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Brown breakfast sausage in a skillet.

  • Step 3: Remove to a paper towel lined plate.

  • Step 4: While sausage is browning, mix cornbread mix, onion ,egg, sour cream, and milk in a mixing bowl.

  • Step 5: Stir in 1/2 cups shredded cheese, cooked breakfast sausage, jalapenos, and jalapeno juice.

  • Step 6: Pour in a sprayed 9 x 9 baking dish.

  • Step 7: Bake for 20-25 minutes or until it is golden brown.
