Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 potato, peeled and chopped
  • 1 teaspoon coriander, ground
  • 1/2 teaspoon cinnamon, ground
  • 1 pound carrots, peeled and chopped
  • 5 cups vegetable broth
  • Salt
  • Pepper

How to Make

  • Step 1: In a large saucepan or pot over medium heat, heat the olive oil and butter and then add the onion and saute for 5 minutes.

  • Step 2: Stir in the potato, coriander and cinnamon and stir fry for one minute and then add the carrots and broth, plus 1 teaspoon salt and 1/4 teaspoon pepper and bring to a boil and then lower heat and simmer for 20 minutes or until carrots have softened.

  • Step 3: Blend the soup and serve.
