Ingredients

The ingredients are:
  • 400 grams udon noodles, shelf-fresh udon noodles
  • 500 grams pork stir-fry strips
  • 1 tablespoon vegetable oil
  • 1/4 cup hoisin sauce
  • 2 tablespoons oyster sauce
  • 200 grams coleslaw mix
  • 4 green spring onions, sliced
  • 1/2 cup roasted cashew nuts

How to Make

  • Step 1: Place noodles in a large heatproof bowl and cover with hot water and stand for 2 minutes and then gently separate., drain.

  • Step 2: Meanwhile, toss pork with oil in a bowl.

  • Step 3: Heat a large wok over a medium to high heat and add pork in two batches and stir-fry for about 1 minute and 30 seconds, or until browned and then remove pork from pan.

  • Step 4: Add combined sauces and cup water to the wok with noodles and gently toss for about 1 minute, or until noodles are hot and now return pork and toss until warmed.

  • Step 5: Add coleslaw, onions and cashews, remove from heat and toss until coleslaw is just wilted and serve.
