  • 1 cup yellow cornmeal
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 3/4 cup buttermilk
  • 1 tablespoon hot sauce
  • 36 ounces catfish fillets skins and bones removed, rinsed, patted dry (4)
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon freshly ground black pepper
  • Garnish
  • 1 lemon, wedged
  • 4 tablespoons tarter sauce

How to Make

  • Step 1: Preheat a deep-fryer to 375 degrees F.

  • Step 2: Mix the cornmeal, paprika and cayenne in a large bowl.

  • Step 3: In a separate bowl, add the buttermilk and the hot sauce.

  • Step 4: Season the catfish with salt and pepper.

  • Step 5: Dredge in the buttermilk and then the cornmeal and spice mixture.

  • Step 6: Drop carefully in the hot oil.

  • Step 7: Fry for 4 minutes until crisp.

  • Step 8: Remove to a paper towel lined sheet tray.

  • Step 9: Season with salt and pepper to taste.

  • Step 10: Serve with lemon wedges and a tablespoon of tartar sauce.
