Step 1: Preheat a deep-fryer to 375 degrees F.
Step 2: Mix the cornmeal, paprika and cayenne in a large bowl.
Step 3: In a separate bowl, add the buttermilk and the hot sauce.
Step 4: Season the catfish with salt and pepper.
Step 5: Dredge in the buttermilk and then the cornmeal and spice mixture.
Step 6: Drop carefully in the hot oil.
Step 7: Fry for 4 minutes until crisp.
Step 8: Remove to a paper towel lined sheet tray.
Step 9: Season with salt and pepper to taste.
Step 10: Serve with lemon wedges and a tablespoon of tartar sauce.
