Step 1: Heat a large frying pan over high heat; season the steak well with salt and pepper.
Step 2: Add about half the butter to the pan and fry the steak until medium rare; ( In the last 2-3 minutes of cooking, add the remaining butter and continuously spoon the butter over the steak).
Step 3: Remove the steak to a warm plate and rest in a warm, draught free place for around 5 minutes.
Step 4: To make the sauce: Pour the brandy into the same pan used to cook the steak, reducing the heat to medium.
Step 5: Scrape any residue from the bottom of the pan.
Step 6: Add the cream and mustard and whisk to a smooth sauce.
Step 7: Add the final (finish brandy) tablespoon of brandy & taste and adjust seasoning to your taste.
Step 8: Thinly slice the steak and transfer to a serving platter.
Step 9: Pour over the sauce and scatter with parsley and more black pepper.
