Step 1: Combine stock, hominy ,lime juice, oregano, basil, pureed chipotle and bay leaf in a stockpot and season to taste with salt and white pepper.
Step 2: Bring to a boil and simmer for 15 minutes.
Step 3: Add shredded chicken, tomatoes, red onion and cilantro bring to a boil and simmer for 5 minutes.
Step 4: Remove bay leaf.
Step 5: Adjust seasonings to taste.
Step 6: Ladle very hot soup into warm soup bowls equally.
Step 7: Drop in cheese cubes.
Step 8: Garnish each serving with a few tortilla strips, avocado slices and a cilantro sprig.
