Ingredients

The ingredients are:
  • 5 cups dry egg noodles
  • 1 1/2 pounds ground beef
  • 1 can (8-ounce) tomato sauce, low-sodium
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon lemon pepper
  • 2 teaspoons unsalted butter
  • 1 cup reduced-fat cottage cheese (small curd)
  • 1 cup sour cream
  • 4 green onions, sliced thin
  • 1/4 cup fresh parsley, minced
  • 1 cup shredded Swiss cheese

How to Make

  • Step 1: Cook egg noodles according to the directions on the package.

  • Step 2: Meanwhile, in a large skillet, cook beef over medium heat until no longer pink, about 5 minutes, then drain.

  • Step 3: Stir in the tomato sauce, salt, garlic powder & lemon pepper, then bring to a boil, reduce the heat & simmer, uncovered for 5 minutes.

  • Step 4: Preheat the oven to 350 degrees F & grease an 11"x7" baking dish.

  • Step 5: When noodles are done, drain them, then toss them with the butter, before setting them aside.

  • Step 6: In a blender, process the cottage cheese & sour cr4eam until smooth, then transfer this mixture to a large bowl & stir in the onions & parsley.

  • Step 7: Add the noodles to this mixture, tossing to coat.

  • Step 8: In the prepared baking dish, layer 1/3 of the noodle mixture & half of the meat sauce, then repeat the layers, before topping it all with the remaining noodle mixture.

  • Step 9: Sprinkle with the Swiss cheese & bake, uncovered for 25 to 30 minutes or until bubbly & lightly browned.
