Ingredients

The ingredients are:
  • 1 kilogram lamb shanks (4 at approximately 250 grams each), excess fat trimmed
  • 1/4 cup plain flour, seasoned (40g)
  • 2 tablespoons Chinese 5 Spice powder
  • 2 tablespoons vegetable oil
  • 4 cm piece fresh ginger, peeled and thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 green onions, cut into 4cm lengths +extra, thinly sliced, to serve
  • 1 large carrot, diced
  • 1 chili, small, dried (optional)
  • 2 star anise
  • 2 tablespoons light soy sauce
  • 1 liter beef stock salt-reduced (4 cups)
  • TO SERVE
  • Steamed Asian greens
  • Rice, cooked
  • Red chili, thinly sliced
  • Coriander sprigs

How to Make

  • Step 1: Pat lamb dry with paper towel.

  • Step 2: Place flour and Chinese 5 spice in a large snap lock bag, add lamb and toss to coat.

  • Step 3: Heat half the oil in a large casserole dish over medium-high heat and cook shanks, in 2 batches, if necessary, for 6-8 minutes or until browned all over and then remove shanks from pan and set aside.

  • Step 4: Add remaining oil to same casserole dish, heat over medium-low heat and add ginger and garlic and cook for 1 minute and then add onions and carrots and cook for a further 2-3 minutes, now add chilli (if using), star anise, soy and beef stock and return shanks to the pan and bring to the boil, adding water, if necessary, to completely cover the shanks.

  • Step 5: Reduce heat to a low simmer, cover and cook for 2 ½ -3 hours or until lamb is tender and falling off the bone.

  • Step 6: Serve shanks with braising liquid and vegetables, Asian greens, rice, chilli, green onions and coriander, suggested.

  • Step 7: TIPS - Cook lamb shanks on a Sunday for a delicious Monday night meal. Skim any excess oil from the top of the sauce prior to simmering. Try shredding the shank meat, add some finely shredded cabbage and coriander and make dumplings using wonton wrappers.
