Step 1: Wash the apples well. Core and slice them. No need to peel.
Step 2: Tie the cloves and cinnamon in a cheesecloth packet or bag.
Step 3: Add all the ingredients, except the Ginger Beer, to a large pitcher. Cover tightly and refrigerate overnight.
Step 4: When ready to serve, remove the cheesecloth packet (or strain the Sangria if you didn't use one). Remove and discard the chile.
Step 5: Add the ginger beer right before serving. Garnish with additional sliced apples, red and green.
