  • The following recipe serves 8 people.

Ingredients

The ingredients are:
  • Meatloaf
  • 2 pounds lean ground beef (personally, I don't use super lean beef, because the fat adds moisture)
  • 1/2 - 1 medium red onion, sliced and grilled (once grilled, chop the onion up)
  • 6-8 bacon strips, cooked and chopped (if infusing). If you are placing the bacon on top of the loaf just par cook the bacon)
  • 1 pound mild cheddar cheese (or your favorite cheese)
  • 4 medium eggs
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons Chipotle Pepper Sauce
  • 1 cups bread crumbs (optional)
  • 1 tablespoons salt (this seems like a lot to me, so I'd use less)
  • 1/2 tablespoon black pepper
  • Meatloaf Glaze:
  • 10 ounces of ketchup
  • 2 1/2 tablespoons of Chipotle Pepper Sauce
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: In a large mixing bowl, add all meatloaf ingredients together and mix well. Make certain all ingredients are mixed thoroughly.

  • Step 3: On a greased sheet pan or loaf pan, mold the meat into a loaf. (I personally prefer placing it on a sheetpan to release any grease)

  • Step 4: Precooked strips of bacon (optional)

  • Step 5: Glaze the meatloaf with about 1/3 of glaze mixture.

  • Step 6: Place the meatloaf to oven and bake for 15 minutes

  • Step 7: Remove meatloaf again and re-glaze using another 1/3 of the mixture

  • Step 8: Lay bacon strips (if using) on the top of the meatloaf.

  • Step 9: Return meatloaf to oven a bake at 400 degrees F for another 15-20 minutes or until the internal temperature is 165 degrees F.

  • Step 10: Remove from oven and let the meatloaf rest for about 5 minutes.

  • Step 11: Slice the meatloaf and serve.

  • Step 12: Any remaining glaze mixture can be served as a side for dipping.

  • NOTE: The oven bake time seems short, but because it's at a somewhat higher temperature than what I normally cook mine for, make sure it's cooked through.
