  • 1/2 pound pork sausage
  • 1/2 cup green pepper, chopped
  • 1/4 cup onion, chopped
  • 8 ounces tomato, (1 can)
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon black pepper
  • 1 garlic clove, finely chopped
  • 15 ounces black-eyed peas, undrained (1 can)
  • 4 ounces cheddar cheese, grated

How to Make

  • Step 1: Brown sausage in large skillet, crumbling with fork as it browns.

  • Step 2: Add green pepper & onion to skillet with sausage and cook for 5 minutes.

  • Step 3: Drain fat as needed.

  • Step 4: Add tomatoes & seasonings, stir well.

  • Step 5: Pour in blackeyed peas with the liquid in the can.

  • Step 6: Cover and simmer for 15 minutes, stirring occasionally.

  • Step 7: Serve hot with grated cheese on top.
