Step 1: Brown sausage in large skillet, crumbling with fork as it browns.
Step 2: Add green pepper & onion to skillet with sausage and cook for 5 minutes.
Step 3: Drain fat as needed.
Step 4: Add tomatoes & seasonings, stir well.
Step 5: Pour in blackeyed peas with the liquid in the can.
Step 6: Cover and simmer for 15 minutes, stirring occasionally.
Step 7: Serve hot with grated cheese on top.
