  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 14 ounces dry white rice, (2 cups)
  • 2 teaspoons chicken bouillon
  • 4 cups water
  • 1/2 cup frozen corn
  • 15 ounces kidney beans, drained (1 can)
  • 4 ounces cheddar cheese, grated
  • 2 green onions, minced

How to Make

  • Step 1: Heat oil in large sauce pan.

  • Step 2: Cook chicken until lightly browned.

  • Step 3: Add onions and bell peppers.

  • Step 4: Cook until translucent.

  • Step 5: Add tomato paste.

  • Step 6: Add spices, rice, water, bullion, beans and corn.

  • Step 7: Cover simmer and simmer for 20 minutes.

  • Step 8: Take off heat and leave covered 5 minutes.

  • Step 9: Stir in cheese and green onion.

  • Step 10: Check for seasoning.
