  • 2 cloves garlic, minced
  • 1 teaspoon jalapeño, minced
  • 1/4 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon pepper
  • 1 cup water
  • 30 ounces black beans, undrained, (2 cans - 15 ounces each)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Garnish
  • 3 scallions, minced

How to Make

  • Step 1: Get all spices together.

  • Step 2: Get all veggies together.

  • Step 3: Add the oil to a large pot and turn the heat on high.

  • Step 4: Add the onion, green pepper, garlic, and jalapeño.

  • Step 5: Sauté for 5 minutes until the onions are translucent.

  • Step 6: Add the cumin, coriander, oregano, salt, smoked paprika, and pepper.

  • Step 7: Stir to coat the vegetables.

  • Step 8: Add beans use water to rinse out cans.

  • Step 9: Add the water.

  • Step 10: Simmer 30 minutes, stirring occasionally.

  • Step 11: At end stir in cilantro and lime juice.

  • Step 12: Season to taste.

  • Step 13: Garnish with onions.
