Ingredients

The ingredients are:
  • 1/2 tbs extra virgin olive oil
  • 1/4 brown onion, finely chopped
  • 3/4 garlic cloves, finely chopped
  • 13 grams tomato paste
  • 1/4 cup cream, thickened
  • 125 grams frozen peeled prawns, (tails intact - I prefer to remove)
  • 1/4 bunch continental parsley, leaves picked, chopped
  • 1/4 loaf sourdough bread, sliced (to serve) or
  • 100 grams dried pasta, cooked (to serve) or
  • 1 cup rice, cooked (to serve)

How to Make

  • Step 1: Heat oil in a large frying pan over medium-high heat. Cook onion and garlic, stirring occasionally, for 5 minutes or until softened and then add paste and cook, stirring, for 1 minute or until fragrant.

  • Step 2: Add cream and bring to the boil over high heat and boil for 2 minutes or until sauce has thickened slightly and season with pepper.

  • Step 3: Add prawns and cook, stirring occasionally, for 2 minutes or until prawns are just cooked through and sprinkle with parsley and serve with bread, pasta or rice.
