Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 4 tablespoons tomato paste
  • 16 ounces dry elbow macaroni (1 box)
  • 1 cup onion, very finely diced
  • 1 zucchini, finely diced
  • 1 carrot, finely diced
  • 2 garlic cloves, minced
  • 1 pound ground beef
  • 15 ounces tomatoes, crushed (1 can)
  • Spices
  • 1/2 teaspoon seven spice
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon paprika powder
  • 1/4 teaspoon basil
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

How to Make

  • Step 1: Get spices ready.

  • Step 2: Cook pasta in heavily salted boiling water until al dente.

  • Step 3: Drain saving 1/2 cup pasta water.

  • Step 4: Meanwhile, in a large skillet heat the olive oil.

  • Step 5: Once hot, add the diced onion, and cook for 4-5 minutes until softened.

  • Step 6: Add the diced zucchini and carrots, and garlic and cook for a further 4-5 minutes until softened slightly.

  • Step 7: Add the ground beef, and cook breaking up the meat.

  • Step 8: Keep cooking until the beef is browned and cooked through, drain the fat if needed.

  • Step 9: Add in the salt, pepper, and all the spices to taste.

  • Step 10: Cook for another minute or so.

  • Step 11: Add the tomato paste.

  • Step 12: Don't burn.

  • Step 13: Add tomatoes and pasta water.

  • Step 14: Simmer 10 minutes

  • Step 15: Add macaroni and simmer until thickened.

  • Step 16: Check seasoning for taste.
