  • 2 pounds boneless pork roast
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil
  • 1/2 cup celery, finely minced
  • 1/2 cup onions, finely minced
  • 1/2 cup carrots, finely minced
  • 4 cloves garlic, finely minced
  • 1/4 cup burgundy wine
  • 56 ounces crushed tomatoes, (2 -28 ounce cans) rinse out cans with water
  • 2 pounds fresh mushrooms, sliced
  • 1 cup red peppers, hot, minced
  • 3 sweet cherry peppers, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1 teaspoon dry oregano
  • 2 cups water
  • 2 teaspoons sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes, to taste

How to Make

  • Step 1: In a large stockpot, add 1/4 cup oil.

  • Step 2: Brown the seasoned meat.

  • Step 3: Lower heat, add the garlic, onion, celery, cook until soft around 3 minutes.

  • Step 4: Do not brown garlic.

  • Step 5: Deglaze with wine.

  • Step 6: Add everything else.

  • Step 7: Simmer on low for at least 2 1/2 hours or until meat falls apart.

  • Step 8: Add more water if getting too thick.
