Step 1: In a large stockpot, fry onion, peppers, garlic in olive oil until soft and clear.
Step 2: Add the sausage out of the casing and cook till completely browned.
Step 3: Add to crockpot that has been sprayed with non stick spray (Pam).
Step 4: Add mushrooms, tomatoes, seasonings to taste and parsley to the crockpot or stockpot.
Step 5: Simmer on low for 3 hours, or cook low for 8 hours in crockpot stirring occasionally.
