  • 1 cup onion, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 6 cups chicken broth
  • 12 ounces evaporated milk (1 can)
  • 8 ounces cooked boneless skinless chicken, shredded
  • 2 cups frozen peas & carrots
  • 7 ounces dry orzo pasta, (1 cup)
  • 8 ounces cheddar cheese, shredded

How to Make

  • Step 1: Heat butter in large stock pot.

  • Step 2: Add onions, and season to taste.

  • Step 3: Cook until translucent.

  • Step 4: Add stock and milk, rinse out milk can.

  • Step 5: Add chicken and thawed frozen vegetables.

  • Step 6: Add orzo and simmer for 30 minutes.

  • Step 7: Season to taste.

  • Step 8: Take off heat and add cheese and let melt and stir.
