Ingredients

The ingredients are:
  • Marinade
  • 1 cup wine vinegar
  • 1 cup water
  • 1 cup onions, sliced
  • 2 bay leaves
  • 1 whole clove, stuck in onion
  • 1 teaspoon dry mustard
  • 1 clove garlic, halved
  • 1 tablespoon kosher salt
  • 1 teaspoon pepper
  • Roast
  • 5 pounds venison roast
  • 1/2 cup bacon grease
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 ounces salt pork strips, 1/4 inch thick

How to Make

  • Step 1: Combine marinade in large covered bowl.

  • Step 2: Put roast in marinade and put in fridge.

  • Step 3: Turn several times for at least 24 hours.

  • Step 4: Take out and pat dry..

  • Step 5: In Dutch oven, heat bacon grease.

  • Step 6: Season liberally to taste.

  • Step 7: Cover in Flour.

  • Step 8: Brown on all sides.

  • Step 9: Place salt pork over the top

  • Step 10: Bake in 350 degree oven for 3 hours, basting often.

  • Step 11: Cook until tender, don't overcook because it will become tough.
