Step 1: Combine marinade in large covered bowl.
Step 2: Put roast in marinade and put in fridge.
Step 3: Turn several times for at least 24 hours.
Step 4: Take out and pat dry..
Step 5: In Dutch oven, heat bacon grease.
Step 6: Season liberally to taste.
Step 7: Cover in Flour.
Step 8: Brown on all sides.
Step 9: Place salt pork over the top
Step 10: Bake in 350 degree oven for 3 hours, basting often.
Step 11: Cook until tender, don't overcook because it will become tough.
