Ingredients

The ingredients are:
  • 3 ounces lemon gelatin (1 package)
  • 1 1/2 cups grapefruit juice, canned
  • 16 ounces diced beets, drained, reserve juice (1 can)
  • 1/2 cup celery, sliced
  • 8 ounces salad greens
  • Dressing
  • 1 tablespoon canned grapefruit juice.
  • 3 ounces cream cheese, softened (1 package)
  • 1/4 cup mayonnaise
  • 1 tablespoon toasted sesame seeds

How to Make

  • Step 1: Dissolve gelatin in hot grapefruit juice.

  • Step 2: Add 1/2 cup liquid drained from beets.

  • Step 3: Chill until partially thickened.

  • Step 4: Fold in drained beets and celery.

  • Step 5: Pour into a large jello salad mold.

  • Step 6: Chill until firm.

  • Step 7: SESAME SEED DRESSING:

  • Step 8: Gradually blend 1 tablespoon grapefruit juice into 1 package of cream cheese with electric mixer, beating until fluffy.

  • Step 9: Fold in 1/4 cup mayonnaise and 1 tablespoon sesame seeds.

  • Step 10: PRESENTATION:

  • Step 11: Unmold salad onto salad greens and top with dressing.
