Ingredients

The ingredients are:
  • 5 pounds whole chicken
  • 12 cups water
  • 2 cups yellow onions, chopped
  • 2 cloves garlic, minced
  • 3 celery ribs, diced, with tops
  • 20 ounces frozen corn
  • 1/4 teaspoon saffron, crushed
  • 1/2 teaspoon turmeric
  • 2 teaspoons tabasco
  • 3/4 cup parsley, minced
  • 1 tablespoon salt, to taste
  • 16 ounces dry wide egg noodles
  • Garnish
  • 3 eggs, hard boiled, chopped

How to Make

  • Step 1: Simmer chicken in water for 2 hours.

  • Step 2: Remove chicken from pot to cool.

  • Step 3: Strain and skim the stock.

  • Step 4: Add onions, garlic and celery, simmer for 35 minutes.

  • Step 5: Add corn, saffron, Tabasco.

  • Step 6: Simmer covered for 40 minutes.

  • Step 7: Meanwhile, debone chicken and and chop meat into half inch pieces.

  • Step 8: Add meat, parsley and salt to pot.

  • Step 9: Cook, uncovered, for 20 minutes.

  • Step 10: Stir in noodles, boil, uncovered, 15 minutes.

  • Step 11: Add chopped eggs, let set 5 minutes.
