Step 1: Place the quinoa, water, cinnamon and vanilla in a small saucepan. Bring to a boil, then reduce to a simmer. Cover and cook for 10-15 minutes until quinoa can be fluffed with a fork.
Step 2: Stir in the applesauce, raisins, and the warmed milk. Divide between two bowls.
Step 3: Top with the diced apples and the pecans. Sprinkle with some cinnamon or nutmeg, if desired.
