  • 9 ounce baked pie crust, (9 inches)
  • Filling
  • 1 cup grapefruit juice
  • 1/2 cup water
  • 2 egg yolks
  • 1 cup sugar
  • Slurry
  • 1/4 cup grapefruit juice
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • Meringue
  • 2 egg whites, beaten stiff
  • 1/4 cup sugar
  • 1/4 teaspoon salt

How to Make

  • Step 1: In sauce pan, mix grapefruit juice, water and sugar.

  • Step 2: Bring to a boil.

  • Step 3: Mix the slurry.

  • Step 4: Pour into boiling juice mixture.

  • Step 5: Mix egg yolks and temper into juice a little at a time, whisking constantly until thickened.

  • Step 6: Pour into baked pie shell.

  • Step 7: Cool slightly.

  • Step 8: Cover with meringue that you have made by beating salt and egg whites stiff adding sugar gradually.

  • Step 9: Bake at 350 degrees F for 15 minutes until meringue is golden brown.
