Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Lightly grease an 8” by 8” baking pan with butter then dust with a bit of flour; set aside
Step 3: In a large bowl, stir together the first 8 ingredients, flour through to salt.
Step 4: In another bowl, whisk the eggs then whisk in the oil.
Step 5: Add the wet ingredients to the flour mixture and mix until blended.
Step 6: Fold in the shredded apple, carrots, and raisins. This will be a thick batter.
Step 7: Pour the batter into the prepared baking pan and cook for 45 to 50 minutes or until it is golden and cooked through. To determine if the cake is ready, insert a toothpick in the center, if it comes out clean it is ready.
Step 8: Remove the cake from the oven and place on a cooling rack.
Step 9: When cooled remove the cake from the pan, slice, and serve with a pat of butter or cream cheese, or just on its own.
