  • 10 ounces beef consomme (1 can)
  • 2 cups tomato juice
  • 2 tablespoons sherry
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 ounces light cream, (1/2 cup)
  • Garnish
  • 4 ounces heavy cream, beaten
  • 1 tablespoon chives, minced

  • Step 1: Heat the consomme, sherry and tomato juice until boiling.

  • Step 2: Cool in fridge.

  • Step 3: When cold, add the half and half (light cream).

  • Step 5: Bowl up and add a dollop of whipped cream and sprinkle chives over it.
