The ingredients are:
  • 12 chicken breasts, cooked, boned, shredded
  • 1 pound spinach leaves
  • 2 heads lettuce
  • 1 bunch grapes
  • 2 pints cherry tomatoes, halved
  • 1 red onion, sliced in rounds
  • 3 cans mandarin oranges
  • 8 ounces roasted peanuts
  • 8 ounces raisins
  • For the dressing:
  • 1 cup lemon juice
  • 1/2 cup honey
  • 3 pinches cayenne pepper
  • 4 teaspoons salt
  • 7 teaspoons poppy seeds
  • 4 teaspoons dijon mustard
  • 1 1/2 cups vinegar
  • 1 1/4 cups olive oil

How to Make

  • Step 1: Prepare dressing by combining all the dressing ingredients in a jar.

  • Step 2: Marinate chicken overnight in 1/3 of the dressing.

  • Step 3: In a large serving bowl add the marinated chicken and the next 8 ingredients (-raisins).

  • Step 4: Add the remainder of the dressing and toss.
