Step 1: Cream together sugar and butter in an electric mixer.
Step 2: When fluffy, add vanilla and lemon rind.
Step 3: Blend well.
Step 4: Add eggs, one at a time, mix well.
Step 5: Remove from mixer.
Step 6: Add cake flour; blend with a heavy mixing spoon.
Step 7: Chill dough in refrigerator overnight.
Step 8: Roll dough to 1/8 inch thickness and cut out with cookie cutters.
Step 9: Bake in preheated 375℉ oven until brown, about 7 to 8 minutes.
