  • Crust
  • 1 cup butter, melted
  • 1/2 cup powdered sugar, sifted
  • 2 cups flour
  • 1/4 teaspoon salt
  • Filling
  • 1 1/2 cups butter
  • 1 1/2 cups sugar
  • 8 egg whites
  • 8 egg yolks
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 16 ounces cream cheese, softened
  • Topping
  • 2 tablespoons powdered sugar

How to Make

  • Step 1: Crust:

  • Step 2: Mix melted butter, powdered sugar, salt and flour.

  • Step 3: Pat into a 9 x 13 baking dish.

  • Step 4: Bake 20 minutes in 350 degrees F oven.

  • Filling

  • Step 5: Cream together butter with 1 cup sugar.

  • Step 6: Add egg yolks one at a time, beating well after each addition.

  • Step 7: Add lemon juice and vanilla.

  • Step 8: Add flour, salt and cream cheese.

  • Step 9: Cream until smooth.

  • Step 10: In another bowl, whip egg whites, gradually adding 1/3 c sugar.

  • Step 11: Fold into egg yolk mixture.

  • Step 12: Pour into ‘half-baked” crust.

  • Step 13: Bake in 350 degree oven 30-45 minutes.

  • Step 14: Test with knife to see if it comes out clean.

  • Step 15: Cool.

  • Step 16: Dust with powdered sugar.

  • Step 17: Cut into small squares.
