  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • Fresh chopped parsley or cilantro for garnish

How to Make

  • Step 1: Heat a large skillet over medium-high heat.

  • Step 2: Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.

  • Step 3: Push the cooked ground beef to one side of the skillet. Add olive oil to the other side.

  • Step 4: Add the sliced zucchinis, bell pepper, carrots, and mushrooms to the skillet. Sauté for about 4-5 minutes until the vegetables start to soften.

  • Step 5: Push the vegetables to the side with the ground beef. Add minced garlic to the cleared side of the skillet and sauté for about 30 seconds until fragrant.

  • Step 6: Mix the ground beef and sautéed vegetables together in the skillet.

  • Step 7: Drizzle soy sauce and sesame oil (if using) over the mixture. Add red pepper flakes for a touch of spice.

  • Step 8: Season with salt and black pepper according to your taste.

  • Step 9: Continue to stir-fry the mixture for another 3-4 minutes until the flavors meld together and the vegetables are tender yet slightly crisp.

  • Step 10: Remove from heat.

  • Step 11: Garnish with freshly chopped parsley or cilantro.
