Step 1: Heat a large skillet over medium-high heat.
Step 2: Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
Step 3: Push the cooked ground beef to one side of the skillet. Add olive oil to the other side.
Step 4: Add the sliced zucchinis, bell pepper, carrots, and mushrooms to the skillet. Sauté for about 4-5 minutes until the vegetables start to soften.
Step 5: Push the vegetables to the side with the ground beef. Add minced garlic to the cleared side of the skillet and sauté for about 30 seconds until fragrant.
Step 6: Mix the ground beef and sautéed vegetables together in the skillet.
Step 7: Drizzle soy sauce and sesame oil (if using) over the mixture. Add red pepper flakes for a touch of spice.
Step 8: Season with salt and black pepper according to your taste.
Step 9: Continue to stir-fry the mixture for another 3-4 minutes until the flavors meld together and the vegetables are tender yet slightly crisp.
Step 10: Remove from heat.
Step 11: Garnish with freshly chopped parsley or cilantro.
