  • 1 cup onion, chopped
  • 1 garlic clove, smashed
  • 7 ounces dry white rice (1 cup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1 tablespoon dried parsley
  • 1 lemon, zest, juice
  • 2 tablespoons tahini
  • 15 ounces garbanzo beans, undrained (1 can)
  • 2 cups water

How to Make

  • Step 1: Heat oil in large covered sauce pan.

  • Step 2: Cook onions until translucent.

  • Step 3: Add garlic and the rest of ingredients.

  • Step 4: Cover cook on low simmer 20 minutes.

  • Step 5: Turn off heat but don't uncover for 5 minutes.

  • Step 6: Check for seasoning and add 1 more tablespoons of lemon juice if needed.

  • Step 7: Remove bay leaf.

  • Step 8: Fluff.
