Ingredients

The ingredients are:
  • 2 1/2 to 3 pounds chicken thighs (or use whatever fits into you baking dish without over crowding, 8 to 10 thighs)
  • Seasoned salt and fresh ground black pepper
  • 1/4 to 1/3 cup grated Parmesan cheese
  • 4 cups pasta sauce (use your favorite)
  • 1/2 to 3/4 cup sliced fresh mushrooms
  • 1/3 cup sliced green olives
  • 1 1/2 cups shredded mozzarella cheese (can use more or less)
  • Cooked spaghetti

How to Make

  • Step 1: Preheat oven to 350 degrees F. Set oven rack to lowest position. Grease a 13 x 9-inch baking dish.

  • Step 2: Season chicken pieces LIGHTLY with seasoned salt (or white salt) then pepper. Brown (only the skin side) in a skillet in a little oil for about 3 minutes. Transfer skin-side up into baking dish.

  • Step 3: Spinkle the browned chicken with Parmesan cheese. In a large bowl combine the pasta sauce with mushrooms and olives. (If sauce is very thick add in a small amount of water). Pour over chicken; bake uncovered for about 40-45 minutes or until chicken is done.

  • Step 4: At end of cooking sprinkle with mozzarella cheese; return to oven just until cheese melts. Serve with spaghetti.
