Ingredients

The ingredients are:
  • 2 garlic cloves, grated
  • 2 ounces (1/2 small) red onion, halved and thinly sliced
  • 2 tablespoons red wine vinegar
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon salt, divided use
  • 2 cans (15 oz) cannellini beans, rinsed and drained
  • 1/2 cup flat leaf parsley, roughly chopped
  • 1/4 cup fresh dill, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 3 ounces (1 small) avocado, diced

How to Make

  • Step 1: In a small bowl, combine the garlic, red onion, vinegar and olive oil. Season with 1/2 teaspoon salt and some pepper to taste.

  • Step 2: In a separate bowl, gently toss the beans with the remaining 1/2 teaspoon of salt. Cover the bowl and microwave until hot, about 1-2 minutes. Remove from microwave and immediately add the dressing mixture. Toss gently to combine. Let stand until cooled to room temperature - about 30 minutes. Gently stir occasionally.

  • Step 3: Add the parsley, dill, lemon zest and juice. Toss gently. Add the avocado. Toss gently. Taste and adjust seasonings to taste. Transfer to a serving dish and drizzle with a bit of olive oil, if desired.

  • Step 4: NOTE: if making ahead, don't add the avocado until ready to serve.
