  • 1 teaspoon white pepper
  • 6 cups chicken broth
  • 16 ounces tomato sauce (1 can)
  • 1 bay leaf
  • Meatballs
  • 2 pounds ground beef
  • 4 ounces dry white rice, (1/2 cup)
  • 4 eggs, beaten
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons fresh cilantro, minced
  • 2 tablespoons fresh mint, minced
  • 1 teaspoon dried Mexican oregano
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder

How to Make

  • Step 1: Make meatballs the size of walnuts and chill until needed.

  • Step 2: Heat oil and saute onions and peppers.

  • Step 3: Add celery and carrots and cook until softened.

  • Step 4: Add rest of ingredients simmer 30 minutes.

  • Step 5: Simmer 60 minutes covered, adding water as needed and season to taste.

  • Step 6: Remove bay leaf.
