  • Sauce
  • 1/4 cup olive oil
  • 2 cloves garlic, smashed
  • 3 cups tomatoes, cut into chunks
  • 8 ounces brie cheese, rind removed, torn into pieces
  • 1/4 cup basil, torn
  • 1/2 teaspoon fresh ground pepper
  • 1/4 teaspoon salt
  • Pasta
  • 12 ounces dry linguine
  • 6 cups water, boiling
  • 1 teaspoon salt

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente.

  • Step 2: Drain.

  • Step 3: Sauce:

  • Step 4: Pour oil into a large heatproof bowl and add garlic, tomatoes, cheese, basil and a grinding of fresh pepper.

  • Step 5: Cover and let marinate for at least an hour on the counter, it has to be room temperature for cheese to melt right.

  • Step 6: Drain pasta and add immediately to the bowl.

  • Step 7: Toss everything with tongs until the cheese has just started to melt.

  • Step 8: Divide among bowls and serve at once.

  • Step 9: Season to taste.
