Ingredients

The ingredients are:
  • 1 pound Mexican chorizo, casings removed
  • 1/2 cup onion, chopped
  • 1 can (15 ounces) refried beans
  • 1 cup tomatillo salsa
  • 1 package (12 ounces) tortilla chips
  • 1 cup Monterey jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 avocado, chopped
  • 1 jalapeño, chopped
  • 3/4 cup sour cream
  • 1/2 cup fresh cilantro leaves
  • 8 ounces tomatillo salsa
  • Hot Sauce (optional)

How to Make

  • Step 1: Heat oven to 400° Fahrenheit.

  • Step 2: Cook the chorizo and onion on the stovetop on medium heat, stirring occasionally. Cook until the chorizo is browned. Drain.

  • Step 3: Place the refried beans and the salsa into a small pan and cook on medium- high heat. Stir often, till hot.

  • Step 4: Line a baking sheet with aluminum foil. Put a single layer of chips on the baking sheet.

  • Step 5: Top with the chorizo mixture, then the bean mixture, then the cheese.

  • Step 6: Put the baking sheet in the oven. Bake till the cheese is melted and is starting to brown in places.

  • Step 7: Remove from oven. Add the remaining ingredients. Top it all with hot sauce, if desired.
