Step 1: Wash and trim the ends of the courgettes, but leave the courgettes whole.
Step 2: Put them in a pan with water to cover, add some salt and cook over a moderate heat until they are just tender; cool and cut lengthwise into halves.
Step 3: Generously rub a casserole dish with butter and sprinkle all around it with breadcrumbs.
Step 4: Place a layer of courgettes, cut side up, at the bottom of the dish & sprinkle with grated cheese, dot generously with some butter, then some parsley & salt and pepper to taste.
Step 5: Repeat this procedure until all the courgettes are used up; cover the top layer of courgettes with grated cheese and breadcrumbs and bake in a moderate oven (180C/350F,Gas4) for 30 minutes.
Step 6: Serve with the slightly sweetened cream or sour cream.
