Step 1: Heat oil in a large saucepan over high heat.
Step 2: Add beef, and cook, stirring occasionally, until lightly browned, drain grease if you need to.
Step 3: Add onion, celery, and garlic.
Step 4: Cook, stirring often until vegetables are softened, about 8 minutes.
Step 5: Stir in hand crushed tomatoes and oregano.
Step 6: Stir in broth & bullion and bring to a boil.
Step 7: Reduce heat to medium-low, and gently boil until vegetables are tender and add zucchini at very end of cooking.
Step 8: Add gnocchi, and cook until gnocchi are floating.
Step 9: Remove from heat.
Step 10: Stir in spinach, nutmeg and pepper.
Step 11: Add salt if you need it.
Step 12: Sprinkle each serving with grated Parmesan.
