Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 cups yellow onion, chopped
  • 4 celery stalks, thinly sliced
  • 3 garlic cloves, smashed
  • 28 ounces whole, peeled, plum tomatoes (1 can)
  • 1 teaspoon dried oregano
  • 8 cups beef broth
  • 1 teaspoon beef bouillon
  • 1/4 teaspoon nutmeg
  • 16 ounces gnocchi (1 package)
  • 8 ounces fresh baby spinach (1 package)
  • 1 zucchini, chopped
  • 1/8 teaspoon black pepper, to taste
  • Topping
  • 2 ounces parmesan cheese, grated

How to Make

  • Step 1: Heat oil in a large saucepan over high heat.

  • Step 2: Add beef, and cook, stirring occasionally, until lightly browned, drain grease if you need to.

  • Step 3: Add onion, celery, and garlic.

  • Step 4: Cook, stirring often until vegetables are softened, about 8 minutes.

  • Step 5: Stir in hand crushed tomatoes and oregano.

  • Step 6: Stir in broth & bullion and bring to a boil.

  • Step 7: Reduce heat to medium-low, and gently boil until vegetables are tender and add zucchini at very end of cooking.

  • Step 8: Add gnocchi, and cook until gnocchi are floating.

  • Step 9: Remove from heat.

  • Step 10: Stir in spinach, nutmeg and pepper.

  • Step 11: Add salt if you need it.

  • Step 12: Sprinkle each serving with grated Parmesan.
