Ingredients

The ingredients are:
  • 2 medium garlic cloves, minced
  • 1 medium onion, diced
  • 1 to 2 celery stalks, thinly sliced
  • 8 ounces lean ground beef
  • (with 7% fat)
  • 3 cups fat free chicken broth, divided
  • 1 cup fat-free evaporated milk
  • 4 ounces Velveeta reduced fat cheese product, cubed
  • 1/2 teaspoon paprika
  • 1/8 teaspoon black pepper

How to Make

  • Step 1: Spray saucepan with cooking spray and place over medium-high heat. Combine onion, celery, garlic and ground beef in saucepan. Cook until beef is browned. Drain if necessary.

  • Step 2: Add 1/2-1 cup chicken broth and bring to a slow boil. Cover and reduce heat to low until onion and celery are tender, stirring occasionally and adding additional broth if necessary - about 10-15 minutes.

  • Step 3: Once onion and celery are tender, add remaining chicken broth and heat until just boiling.

  • Step 4: Reduce heat to medium-low, add evaporated milk and cubed reduced fat Velveeta cheese stirring continuously until milk is heated through and Velveeta is melted.

  • Step 5: Stir is paprika and black pepper.
