  • 1/2 cup green onions, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • Cooking oil for greasing the pan
  • Eggs and bacon, for serving (optional)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Place the grated potatoes in a large bowl and cover them with cold water. Let them soak for 5 minutes to remove excess starch. Drain the potatoes and pat them dry using a kitchen towel.

  • Step 2: In a separate bowl, combine the chopped spinach, parsley, green onions, salt, black pepper, garlic powder, and flour. Mix well to create the herb mixture.

  • Step 3: Add the herb mixture to the grated potatoes and toss until the ingredients are evenly distributed.

  • Step 4: Heat the butter in a large non-stick skillet over medium heat. Once melted, add the potato mixture to the skillet, spreading it out evenly to form a large pancake. Press down gently to flatten.

  • Step 5: Cook the rösti for about 8-10 minutes, or until the bottom is golden brown and crispy. Carefully flip the rösti using a large spatula.

  • Step 6: Continue to cook for another 8-10 minutes on the other side, until golden brown and crispy.

  • Step 7: Remove the Frankenstein Swiss Rösti from the skillet and transfer it to a cutting board. Let it cool for a few minutes.

  • Step 8: Using a knife, cut the rösti into a Frankenstein's face shape, resembling a square or rectangle with uneven edges.

  • Step 9: Grease the skillet with a little cooking oil and place the cut Frankenstein Swiss Rösti back into the skillet. Cook for an additional 2-3 minutes on each side to crisp up the edges and warm it through.

  • Step 10: Once cooked, transfer the Frankenstein Swiss Rösti to a serving plate.

  • Step 11: Serve the Frankenstein Swiss Rösti as a centerpiece on a breakfast platter, surrounded by eggs and bacon if desired. You can also add additional garnishes such as sliced olives or tomato ketchup to create facial features on the rösti, resembling Frankenstein's monster.

  • Step 12: Enjoy your monstrous creation of Frankenstein Swiss Rösti!
