Ingredients

The ingredients are:
  • 15 ounces refrigerated pie crusts (1 package)
  • 1 egg, beaten
  • Filling
  • 3 tablespoons olive oil
  • 5 zucchini, sliced
  • 2 cups onions, sliced
  • 3 eggs, beaten
  • 8 ounces Italian mix cheese, shredded
  • 1/2 teaspoon salt, to taste
  • 1/8 teaspoon pepper, to taste
  • 1/4 teaspoon nutmeg, to taste

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Chop the zucchini and onions into thin slices to be cooked together on the stove.

  • Step 3: Heat up some oil in a pan and cook the zucchini and onion together on low heat.

  • Step 4: Once they are cooked, turn up the heat on the stove so that the juice from the zucchini evaporates.

  • Step 5: This mix should be relatively dry without much juice.

  • Step 6: After the zucchini and onion are fully cooked, take them off the stove and let cool for ten minutes.

  • Step 7: Once cooled, add the cheese and eggs into the zucchini mixture along with the salt, pepper and the nutmeg, seasoning to taste.

  • Step 8: You can add more nutmeg to taste, but be careful not to add too much as this can be quite strong.

  • Step 9: Mix all of these ingredients together well.

  • Step 10: Let cool and once the mixture is nice and cool, add the mixture onto the pie crust and top the pie with the other pie crust .

  • Step 11: Paint the top of the pie with a beaten egg and poke the pie several times with a fork so that it does not explode in the oven.

  • Step 12: Place in the oven for about 20 minutes or until the crust has browned.

  • Step 13: Let the pie cool for 45 minutes before serving.
