Step 1: Chop the eggs into a bowl and mix with the mayo, yogurt, chutney, curry paste, spring onions and cilantro (they had 2 tablespoons of cilantro) and season to taste.
Step 2: Butter the bread on 4 slices and spoon the egg mixture over two slices.
Step 3: Complete the sandwiches with the remaining bread, then halve.
