Ingredients

The ingredients are:
  • 2 tablespoon olive oil
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 10 ounces dry brown lentils, (1 1/2 cups)
  • 4 ounces dry steel cut oats, (1/2 cup)
  • ½ teaspoon turmeric
  • 8 cups vegetable stock
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper, to taste
  • 8 lemon wedges

How to Make

  • Step 1: Heat oil, and add onions.

  • Step 2: Cook until transparent.

  • Step 3: Add garlic, turmeric, lentils and stir.

  • Step 4: Add oatmeal and stir.

  • Step 5: Add broth and season to taste.

  • Step 6: Simmer 40 minutes, stirring so doesn't stick to bottom.

  • Step 7: At very end stir in parsley and lemon juice.

  • Step 8: Check seasoning.

  • Step 9: Serve lemon wedges on the side.
