Step 8: Roll up the pastry tightly around the sausage mixture, tucking in the edges as you go.
Step 9: Place the rolls seam-side down on a baking sheet lined with parchment paper.
Step 10: Brush the top of each roll with the egg wash.
Step 11: Bake for 25-30 minutes, or until the pastry is golden brown and the sausage is cooked through.
Step 12: Let cool for a few minutes before serving.
