Ingredients

The ingredients are:
  • 1 x 500 gram cob loaf, ( round bread loaf)
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 200 grams rind less, middle cut bacon, diced
  • 8 eggs
  • 1/2 cup thickened cream, (125 milliliters)
  • 1/2 cup self-raising flour (75 grams)
  • 1/3 cup chopped parsley
  • 1 1/2 cups cheddar cheese (135 grams)
  • Salt and pepper
  • Chopped chives to garnish
  • Salad, to serve (optional)

How to Make

  • Step 1: Preheat the oven to 190°C/170°C (fan-forced) and line a baking tray with baking paper

  • Step 2: Lay two sheets of foil to form a cross and place cob in the center then crunch up sides to enclose base of cob & place onto baking tray

  • Step 3: Using a serrated knife, cut a 15 cm circle off the top of the cob loaf. Pull away the soft crumb from the center, leaving a 5 mm thick shell. Note from Google ~ 5mm = just over 3/16 inch

  • Step 4: Heat the oil in a non-stick frying pan over high heat then add the onion and bacon: cook, stirring, for 5 minutes or until onion is cooked and bacon browned, then cool slightly

  • Step 5: Whisk the eggs together and stir in the cream, flour, parsley and 1 cup of cheese; season with salt and pepper.

  • Step 6: Add the cooled bacon and onion mix and combine & pour the egg mix into prepared cob and sprinkle with remaining cheese

  • Step 7: Bake the cob for 50-55 minutes until the tip of a small knife inserted into the center comes out clean; (Cover cob loosely with foil if browning too much)

  • Step 8: Remove cob and stand 10 minutes before cutting into wedges; sprinkle with chives.
