Ingredients

The ingredients are:
  • 1 pound lean ground beef
  • 1 (30 gram) envelope taco seasoning mix
  • 1 cup water
  • 1 (14 ounce) can refried beans (vegetarian)
  • 1 cup salsa
  • 2 cups head lettuce, shredded
  • 2 medium tomatoes, diced
  • 1 red onion, slivered
  • 1 cup 4-cheese Mexican cheese blend or grated cheddar cheese or grated Monterey Jack cheese
  • 3/4 to 1 cup low-fat sour cream
  • 15 to 20 taco shells or small tortillas, warmed

How to Make

  • Step 1: Brown ground beef in skillet and drain off excess fat.

  • Step 2: Add taco seasoning mix and 1 cup water, bring to a boil, reduce heat and simmer, uncovered for 15 to 20 minutes, stirring occasionally.

  • Step 3: While beef mixture is simmering, combine refried beans with 1/4 cup salsa and heat in small saucepan or microwave.

  • Step 4: Arrange beef mixture, bean mixture, tomatoes, etc. in serving dishes and platters on table and allow diners to assemble their own tacos.
